I’m Not Proud: Boxed Mac n Cheese

That’s right folks…boxed Mac n Cheese! I haven’t eaten this stuff in years – not since I went gluten-free, but the college years were filled with the stuff in the blue box, and I loved it, and if I’m honest, I kinda missed that fakey-cheese stuff.

Last week I was in Whole Foods, and happened to stop and look at the Annie’s pasta, and behold – Gluten Free Mac n Cheese! Since it’s pretty much a blizzard out there today, Mark and I are just hanging around the house, so I decided to give whip up some old school mac n cheese for lunch.

And I declare the GF mac very tasty! Of course, not being able to leave well enough alone, I classed it up a bit of sauteed andouille sausage, onion and garlic. Yum. It’s still pretty much junk food, but once in awhile, I think this will hit the spot.

  1. Ha! This totally cracked me up. I ate a lot of boxed mac and cheese in college. When I graduated, I swore, never again. (And I’ve stuck to it!)

  2. Yeah, it feels like a dirty confession to admit to making boxed mac these days, but oh, it was GOOD, and a tiny bit of a thrill just to be able to have GF mac. 🙂

  3. You inspired me to make lactose free mac and cheese (but from scratch) last night. Then we got invited to dinner and it got cooked today. It was still tasty. Thanks for the inspiration. 🙂 I even put sausage in it (never done that before and it was chicken sausage).
